Garlic Scape Pesto

Ingredients Olive OilGarlic ScapesParmesan CheesePine Nuts or Walnuts (optional)SaltCoarsely cut up the scapes and the parmesan so they fit easily into the food processor bowl. Start the food processor with the scapes and parmesan and start to stream in the olive oil. Add the nuts, if desired, and continue processing. Salt, to taste, and adjust the oil and cheese levels to get the desired texture. For two bunches of scapes, you will need about a quarter cup each of the olive oil, parmesan chunks, and nuts.
